Typical Calabrian biscuits

Stracette, typical Calabrian biscuits with candied orange and chopped almonds, are very crumbly and fragrant. In Calabria, they can be found in all bakeries and pastry shops and are traditionally given as gifts when visiting relatives and friends.

Ingredients for typical Calabrian biscuits

  • 500g of flour 00
  • 180g of butter
  • 200g of sugar
  • 2 medium eggs
  • 80g of candied orange
  • 90g of almonds
  • 1 ampoule of vanilla essence
  • 8g of baking powder
  • 1 tablespoon of milk

How to prepare typical Calabrian biscuits

Coarsely chop the candied orange peel and set aside, then do the same with the almonds. The dough can be made by hand in a bowl or with a planetary mixer. In the second case, put the sugar and soft butter in the planetary mixer and mix for a few minutes on speed 2.

Add the eggs, beat them well, then add the rest of the ingredients: almonds, candied peel and the vanilla pod, mix again and finally add the baking powder dissolved in a tablespoon of milk and the sifted flour.

Knead everything well until you get a homogeneous mixture, then place it on a sheet of foil or greaseproof paper and let it rest in the fridge for 15-20 minutes. Roll out the dough with a rolling pin, then cut out strips to make biscuits.

Bake the biscuits in a ventilated oven at 180° and cook for about 13-15 minutes. After baking, take the biscuits out of the oven and leave them to cool completely before storing them.
